Breakfast of Champions

Hi guys! It's been a while since the last post, but so many exciting things have happened since then! This weekend was Homecoming weekend here in Laramie, so we had parents, friends and fun! The party started Thursday night when Juli's parents and Krista got here, and continued when Kara's mom arrived Friday afternoon, and my dad came Saturday morning. It was such a crazy weekend with everybody, but I wouldn't trade it for the world.

So Saturday morning when everyone was meeting at our house for the day to begin and before going to Breakfast at the Buck (I'll explain later), us girls thought it would be fun to make a hearty breakfast for everyone. So that's exactly what we did! With just a few odds and ends we had around the house, we were able to pull together something tasty. We ate one's fill of cinnamon and nutmeg waffles, cheesy scrambled eggs, sausage links, crispy bacon, and salty hash browns. And it was a team effort on making everything; Tim manning the stove, watching over the bacon, sausage and hash browns, Juli whipping up the cheesy eggs, and me pouring batter into the waffle maker (thanks Aunt Gail!).

This spread was enough to feed the masses! And all really easy to make too. Everything we used came from store bought packages or boxes...so it maybe wasn't the most organic, but hey it sure tasted good! For the waffles, I used a waffle mix that all you had to add was water and a little vegetable oil. And to spruce it up I thought it would be fun to add a little cinnamon and nutmeg; it seemed to fit a fall feeling.

<------ The morning nutrition!

So as I said I would explain earlier, here is what breakfast at the Buck entails. In downtown Laramie there is a bar called the Buckhorn, or Buck for short. On special occasions such as Homecoming, they do what they call Breakfast at the Buck. It's a liquid breakfast if you know what I mean. They do cool stuff like give free t-shirts to the first 100 people, or free t-shirts for taking 2 shots. So if you were to make your way to Breakfast at the Buck it would be wise to eat a good breakfast before heading down there. Hence why we decided to make a bangin breakfast for everyone.

And you're going to love this...for dinner this same night we had Qdoba catered!!! Juli's parents were so kind and ordered Qdoba for the Homecoming get together. We feasted on chips, chicken, steak, rice, beans, guacamole and salsa! So look for us chowing down on some Qdoba!
