Crazy-Ass Dinner
Hi everyone! I am here to tell you about a random, but oh so delicious dinner that Anna made this evening! It was comprised of pan cooked chicken dredged in bread crumbs, a rice and black bean combo, sauteed zucchini slices, and cream cheese stuffed jalapenos wrapped in bacon! That's right, you read that last part right! So bangin'! Even though everything seems erratic, it all worked together so well. This was definitely a feel good, comfort food kind of dinner.
Tonight it was just Anna, Juli and I eating. We missed Kara but she's getting ready for her trip to Honduras! She will be working in a clinic and helping out the Honduran people and having the experience of a lifetime! But we will sure miss her the next 8 days!
Well there were no recipes that Anna used for this dinner, so I will do my best to break everything down and tell you how you can make it too!
Chicken Ingredients
1 pound boneless, skinless chicken boobs
2 cups bread crumbs (panko)
2 eggs
3 tablespoons olive oil
Directions
Mix both eggs in a small bowl and add a small amount of water. Put bread crumbs in another bowl. Take chicken and first put into egg wash and then transfer to bread crumbs and coat well. Then transfer chicken to a pan with olive oil and cook until no pink in the middle remains.
The outside layer will become seared and darker, but I promise that is the good part and should happen. If the chicken is not cooking all the way through, you might want to cut it into smaller pieces so it will cook through and cook faster. Now on to the zucchini!
Zucchini Ingredients
2 zucchinis
1 tablespoon olive oil
salt
pepper
Directions
Heat oil in a medium size pan and add zucchini. Add salt and pepper to taste, and saute until cooked and slightly browned.
Pretty simple huh?
Rice and Beans Ingredients
1 box Zataran's rice
1 can black beans, drained and rinsed
Directions
Cook rice according to package directions and add in can of drained and rinsed black beans. Let the beans warm up in pan and serve.
This rice and bean combination was better than you would think a box of rice and a can of beans could be. But its cheap and easy and delicious, so you can't beat it! And last but CERTAINLY not least, the cream cheese stuffed jalapenos wrapped in bacon!
CC, Jalapeno and Bacon Ingredients
7-8 jalapenos
1 brick cream cheese
1 package bacon
Directions
Cut the jalapenos in half long ways. Scoop out the insides and seeds. Fill liberally with cream cheese and then wrap raw bacon around them. Insert a toothpick through them to keep secure. They cook the best when they are grilled, but if you do not have a grill or do not want to cook them on a grill, place them in a 350 degree oven, and cook until bacon is no longer raw. (Cooking this way could take a bit longer).
These are some sinful little nuggets to put in your mouth. Everyone should try these! They have nice flavor from the jalapenos and the creaminess from the cream cheese, and then there is the salty and fatty flavor of the bacon...mmm! And these would be really good as an appetizer or something fun to bring to a party.
