Hi everybody! I promised you the winning chili recipe that Kara used to win the chili cook-off we had here at UW. It is a green chili verde that is sensational! It has to be good to win a crowd-voting chili cook-off right? I thought this one was the absolute best, and blew others out of the water! (or snow...this is frigid Laramie, Wyoming).
If you wanted to pair it with a side, I was thinking corn bread would be really great with this green chili, or even some rolls. Just something warm and bread-like. Here is the winning recipe! (www.denvergreenchili.com)
Ingredients
2 lbs. pork tenderloin, cubed
1 cup coarsely chopped onion
14 oz chicken broth
10 oz can or bottle of green salsa
2 1/2 cups diced green chilis
Spice Mix Ingredients
3 teaspoons garlic (minced or mashed)
2 1/2 tablespoons chicken bouillon
1 teaspoon celery salt
1 tablespoon flour
2 teaspoons oregano
1 tablespoon cumin
3 tablespoons diced jalapeno pepper
1 tablespoon dried cilantro (or 3 tablespoons fresh chopped)
1 tablespoon green chili powder
*Tabasco (green)
*salt (to taste)
Cook additional 15 - 20 minutes
Directions
1. Brown pork and drain
2. Add onion and chicken broth, then simmer 1 hour
3. Add spice mix and green chili salsa, then simmer 1 hour
4. Add diced green chili's, then add salt and Tabasco to taste
5. Simmer another hour and serve
Preparation time: about 1/2 hour
Cooking time: 3 hours
Makes: 2 1/2 quarts
Serves: about 10
This recipe does take quite a bit of time, so it would be good to make on a day that you feel like being in the kitchen for a while. It also makes quite a bit, so if you are planning on having company over, this green chili would be great for that too.
